Choco Bacon
Keto crispy bacon and dark chocolate crisps…
As a chef this seems wrong. I get the salty, sweet nod, however the chocolate is actually not sweet. The 100 % black Montezuma chocolate has no sweetness.
The sweetness actually comes from the caramelisation of the slow cooked bacon. Anyway it converted me a long time ago, this was one of my first keto hacks after the fat drinks and kvass!
12 Rashers of Thick Cut Bacon, organic 80g Montezuma 100% Black Chocolate
Line 12 rashers of thick cut, organic streaky or back bacon, out on a lined metal tray.
Break up 80g of Montezuma 100% black chocolate into a bowl, and melt over a pan of hot water.
You might be able to use a microwave for this but I’ve never tried, so I can’t give any advice on this. Sorry!
Preheat the oven to 175c, and bake the bacon for 10 mins. Then remove the tray and turn the bacon over. Cook until golden and crisp on both sides.
You may need a pastry brush or teaspoon for the next bit.
Keeping an inch clear on one end of the bacon, pick it up, and brush both sides with the melted chocolate. Lay on a cooling rack and allow to set.
Remove and store in fridge or eat there and then!
I promise once you start you won’t stop.
You could also sprinkle chopped nuts and seeds on the chocolate before it sets like cashew, pistachio, flax seed or pumpkin seeds, to give yourself an extra protein and nutrient boost.
