Fresh Tomato Passata

This is a super simple recipe I made the other day, with limited ingredients.

It’s literally just tomatoes and olive oil and is super versatile! Delicious with pasta, as a soup, on toast or great to keep in the fridge for a quick lunch or supper.

6 Plum Tomatoes 1 Garlic Clove, peeled 50g Toasted Almonds 100ml Olive Oil Himalayan Pink Salt

In a Nutribullet or other food blender place all the ingredients, and pulse until you have a semi smooth emulsion. Taste and add salt.

You can happily add chilli, herbs, garlic, peppers or increase the tomatoes or almonds to your desired flavour.

I had mine with simple penne and courgette salad on one day, and in various incarnations afterward!

Its also great just with mozzarella or burrata on toasted sourdough.
